It is a wine made from grapes of the
Palomino
. The special structure that it demonstrates at an initial tasting may or may not be destined for oxidative aging. That is why alcohol is added at 17-18% vol., thus preventing the development of flor and allowing the wine to age exposed to oxygen. The result is a special wine, structured and complex, with aromas of roasted nuts, coffee and fresh meat. (vinif.)
