It is a physico-chemical process of transformation of a product with the help of microorganisms (ferments, yeasts) into a final organic product. There are several types of fermentation: alcoholic, lactic, malolactic, butyric, named after the final product that is most important after completion of the physico-chemical process (biochemistry).
