Aligote Volume II is a limited edition that is defined by authenticity and a real sense of terroir. The specific aromas of earthy road and well-dried straw are complemented by intense notes of green apple, laced with a mineral vein and a finish dominated by citrus accents (grapefruit and grapefruit).
It’s a wine that’s good anywhere, but it’s best at home on the edge of the Danube Delta or right in the heart of it. We had the pleasure of tasting this wine, one at a time, with a fish stew and a plate of Danube fish (catfish, caras, salau), at Mila 23, then with a creation of one of the winery’s oenologists, Adrian Dolghin – his own recipe of fresh tagliatelle with seafood. Excellent in both combinations – a wine whose acidity stands up to fish meat, but which offers something extra thanks to the roundness from maturing for several months on fine yeasts.
A perfect wine for holidays, sea, Delta, fish, but also for urban seafood or vegetarian oriented cuisines – vegetable quiche, eggless pasta with pesto, pan fried vegetables or mushrooms in various interpretations.
