Bottled wine of at least 7 % vol.alc., in which endogenous carbon dioxide (resulting from fermentation) applies an overpressure of 1-2.5 bar at a temperature of 20 degrees Celsius, resulting in a fine, non-foaming perlage when opened (vinif.).
