(winemaking) – Term to define the space between the surface of the poured wine and the top rim of a wine glass. A bulbous, large-diameter glass in the middle with a cup that tapers towards the mouth of the glass has such a large chimney and ensures optimal revelation of the aromatic substances in the wine. This is why red wine glasses usually have a bulbous shape and white wine glasses a thinner shape.
