Protected Designation of Origin (P.D.O.) Known to the general public according to the old terminology D.O.C. (controlled designation of origin) may or may not be followed by one of the traditional terms: C.M.D. – picked at full maturity; C.T. – late harvest; C.I.B. – picked when the grapes are touched by noble rot.
