The group has recently developed Clarifine Proyeast, a natural clarification agent based on Saccharomyces cerevisiae yeast proteins, 100% vegan, organic, and allergen-free, which joins the wide range of clarification agents in its oenological products catalog.
Its respectful extraction process allows obtaining a yeast protein with an average molecular weight of over 15 KDa, ideal for clarifying white, rosé, and red wines.
Thanks to the use of Clarifine Proyeast during the winemaking process, winemakers can obtain cleaner wines with greater brilliance in the case of white and rosé wines. In the case of red wines, the color remains intact, and its reaction is only with the more astringent tannins. Clarifine Proyeast is an organic, allergen-free, and 100% vegan clarification agent, so it can be used for the production of wines intended for organic production, in accordance with European regulations and the NOP. It is also an alternative to animal-based clearing agents.
The recommended doses of Clarifine Proyeast vary depending on the type of wine. For white and rosé wines, the recommended dose ranges from 1 to 7 grams/hectoliter. For red wines, the recommended dose is between 2 and 10 grams/hectoliter. Grupo Agrovin recommends its use in combination with clarification adjuvants, such as bentonite, silica sol, or tannin, to optimize the clarification process.
