Adrian Cocan is the co-founder of Lăptăria cu Caimac, an artisanal Romanian dairy factory specialized in state-of-the-art products. He was among the first to join Carrefour’s national program “Poftim, brânza românească!” (“Here / We Crave Romanian Cheese”).

Romania once had great diversity in cheese varieties, but much has been lost — we need to revive traditional recipes.

Romanian wines are just as good as French wines, though they still lack history and exposure.

As with wine, understanding and using the concept of local terroir is essential in crafting a fine cheese.
