It is difficult to make a rosé sparkling wine with Pinot Noir grapes, but it’s an even more delicate and complex road to obtaining a “Blanc de Noirs” wine from Pinot Noir, using the Charmat method (in which the second fermentation is done in steel tanks). With golden-green hues, bright pale yellow sparks admiration with its perlage defined by finesse and elegance. It develops an attractive and complex olfactory portrait, made of fresh, floral scents and light touches of breadcrumbs. Our senses are harmoniously greeted by aromas of grass, pollen and honey, slightly dried fruit tones, and toasted notes. The taste is dry, delicate and fresh, well balanced, with a gentle tonic background, typical of Pinot Noir. Its finish is velvety, satisfactory, with a delicate and well-defined structure, enriched by light almond notes.
