The choice to turn this local red grape variety, Novac, into a sparkling wine is as original and innovative as possible, but at the same time, it respects the tradition, using the classic method, i.e. the second fermentation takes place in the bottle. Novac, a local grape from the Drăgășani area, is considered to be the older brother of Negru de Drăgășani. A sparkling rosé with great finesse and elegance, with a pink color with pastel tones and aromas typical of the variety – blueberries, black pepper, cloves, dark chocolate, juniper and a tasty mineral note. It is a modern, non-conformist wine that attracts and satisfies with its vibrant and dynamic character. It is carried out amply and generously, completely covering the taste buds, highlighting a structure obtained from well-ripened fruits, which ensures a pleasant persistence of taste. With an enviable structure and vigor, the wine gains attention through elegance, roundness and softness. A good taste finish, defined by complex flavors such as lychee, berries, nutmeg and rose petal jam. Novac Prince Ştirbey sparkling wine has a remarkable expressiveness and personality, thus confirming the great potential of this grape.
